Classic Cheeseburger

The Classic Cheeseburger is arguably the defining fast food icon of the 20th century. A juicy beef patty — seasoned simply with salt and pepper — seared on a flat-top griddle until a dark brown crust forms, then draped with a slice of melting American cheese before being sandwiched in a soft, toasted sesame-seed bun with crisp lettuce, ripe tomato, thin-sliced onion, pickles, ketchup, and yellow mustard. The combination is engineered for maximum textural contrast and satisfaction: crunchy, soft, tangy, rich, and savoury all at once. The cheeseburger has roots in 1920s American diners and became an international symbol of fast food culture when chains like McDonald's, Burger King, and Wendy's exported it worldwide from the 1960s onwards. Yet the best version is still made at home — hand-formed, liberally seasoned, and served immediately off the grill.

Method

  1. Divide ground beef into 4 equal balls (about 150 g each). Gently press each into a 1.5 cm-thick patty, slightly wider than the bun (patties shrink during cooking). Make a shallow thumbprint in the centre of each to prevent doming. Season generously on both sides with salt and black pepper just before cooking — not before, or the salt will draw moisture out.

    About 5 min

Tip: Use cold beef and handle minimally — overworked patties become dense. 80/20 fat ratio is key for juicy results.

  2. Heat a cast-iron skillet or flat-top griddle over high heat until very hot — a drop of water should dance and evaporate instantly. Add a thin smear of oil or nothing (the beef fat will render). Place patties into the pan and press firmly with a spatula for the first 10 seconds to maximise surface contact. Cook undisturbed for 3–4 minutes until a deep mahogany-brown crust forms.

    About 4 min

Tip: Never press the patty repeatedly — you squeeze out all the juices. One firm press at the start is all you need.

  3. Flip each patty once. Immediately place a slice of American cheese on top of each. Cover the skillet with a lid or large bowl for 1 minute to trap steam and melt the cheese perfectly. Cook a further 1–2 minutes for medium doneness (internal temperature 71°C / 160°F). Remove and rest on a warm plate.

    About 3 min

Tip: American cheese melts better than cheddar because of its emulsifiers — it's the authentic choice for classic smash burgers.

  4. While patties rest, lightly butter the cut face of each bun and toast them in the same pan over medium heat for 1–2 minutes until golden and fragrant. This creates a barrier that stops the bun absorbing juices and going soggy.

    About 2 min

Tip: Toasting the bun is non-negotiable for structural integrity and flavour.

  5. Build each burger from bottom bun upward: spread ketchup on the bottom bun, then mustard, then lettuce (the fat from the dressing waterproofs the bread), then tomato slice, then the cheesy patty, then onion rings, then pickles. Cap with the top bun. Serve immediately.

    About 2 min

Tip: Putting lettuce directly on the bread (not the meat) prevents sogginess during serving.
