Nasi Goreng

Indonesia's national fried rice — wok-tossed day-old rice with kecap manis (sweet soy), shrimp paste, sambal and egg. Topped with a fried egg, prawn crackers and cucumber. The secret is the intensely hot wok and the kecap manis.

Method

  1. Toast the terasi (shrimp paste) in a dry pan for 1 minute until fragrant. Set aside.

    About 5 min

  2. Heat a wok over the highest possible heat until smoking. Add 3 tbsp oil. Stir-fry shallots, garlic and chillies for 1 minute. Add terasi and crush it into the mixture.

    About 8 min

  3. Add the protein (chicken, shrimp or tofu) and stir-fry over high heat until just cooked through, about 2–3 minutes.

    About 8 min

  4. Push everything to the side. Add a little oil, pour in 2 beaten eggs, scramble briefly, then mix them into the other ingredients.

    About 8 min

  5. Add the cold rice. Toss and stir-fry vigorously over high heat, breaking up any clumps, for 2–3 minutes. You want each grain to be separate and slightly toasted.

    About 8 min

  6. Pour kecap manis and soy sauce over the rice. Toss to coat evenly. The rice will turn a deep mahogany colour. Cook 1 more minute. Taste and adjust seasoning.

    About 8 min

  7. Serve immediately topped with a fried egg (sunny-side up), spring onions, sliced cucumber and prawn crackers on the side.
