Jollof Chicken Burger

West Africa's party rice — jollof — used as the inspiration for a burger. A chicken patty marinated in jollof spices (tomato, paprika, curry, Maggi) served in a brioche bun with a tomato-pepper jollof aioli, caramelised plantain and coleslaw. The jollof-spiced chicken has the unmistakable smoky-tomato flavour.
