Dal Tadka (Punjabi Smoky Yellow Lentil Dal)

दाल तड़का

Dal Tadka is the most universally beloved dal in North Indian restaurants and dhabas — a simple, satisfying preparation of yellow toor (pigeon pea) or arhar dal cooked soft and flavoured with a dramatic, sizzling tadka of ghee, cumin, garlic, dried red chillies, and onion that is poured over the dal at the table in a cloud of smoke and fragrance. The name "tadka" comes from the tempering process — the dal itself is plainly cooked, and its transformation into something extraordinary happens entirely through the tadka. The aroma of sliced garlic sizzling in hot ghee, the splutter of dried red chillies, the hiss of the tadka hitting the dal — these sensory moments are inseparable from the dish. Dal tadka with rice or roti is the daily meal of millions across North India.

Method

  1. Pressure cook toor dal with turmeric, green chilli, and 600ml water for 4 whistles (or boil 30–35 minutes until completely soft). In a kadai, heat 1 tbsp ghee. Sauté onion until golden (8 minutes). Add tomatoes, cook until mushy (5 minutes). Pour the cooked dal into the tomato-onion base. Simmer 10 minutes. Adjust consistency (it should be pourable but not watery). Adjust salt.

    About 20 min

Tip: Always cook the dal beyond the point you think is "done" — completely broken-down dal with no intact lentil skins produces the smooth, restaurant-style consistency that dhaba dal tadka is known for.

  2. Make the tadka: In a small tadka pan, heat 2 tbsp ghee until very hot (a small piece of garlic should sizzle immediately when dropped in). Add cumin seeds — splutter 15 seconds. Add sliced garlic — fry until golden and fragrant (30–45 seconds, do not burn). Add dried red chillies (they swell and turn bright red in 10 seconds). Add Kashmiri chilli powder off the heat (residual heat blooms the colour without burning the chilli powder).

    About 5 min

Tip: The tadka garlic should be golden, not brown or black. Burnt garlic ruins the entire dal. Keep the heat at medium and watch constantly from the moment the garlic enters the pan.

  3. Pour the entire sizzling tadka over the dal in one confident motion — you hear the dramatic sizzle as it hits the liquid. Do not stir yet. Add fresh coriander. Serve immediately. The traditional dhaba way is to serve the tadka poured over dal in the serving bowl, so diners see the golden garlic and red chillies floating on top. Serve with steamed rice or tandoori roti.

    About 3 min

Tip: The dhungar (coal smoke) technique for an extra smoky dal: place a small piece of charcoal in a metal cup in the dal, pour a little ghee over it, cover the pot for 1 minute to infuse smoke. This is the secret behind the smoky dhaba dal.
