Vanuatu Coconut Crab Noodles

Vanuatu's Pacific island flavours — a fragrant coconut and crab noodle dish drawing on Melanesian ingredients: coconut cream broth, local crab (or mud crab), turmeric, ginger, chilli and lemon basil, tossed with glass noodles or vermicelli. The coconut cream broth has a beautiful golden colour from the turmeric and is intensely flavoured from the crab.
