Uruguayan Chivito Sandwich

Uruguay's national sandwich — the chivito, a towering construction of thin-sliced sirloin steak, ham, mozzarella, bacon, fried egg, tomato, lettuce, olives, pickles and mayonnaise on a soft roll. One of South America's great sandwiches, born in Montevideo in 1946 when a customer asked for goat meat ("chivito") and the chef improvised with what he had.

Method

  1. Season sliced steak. Cook in a very hot oiled pan 1–2 minutes per side (thin slices cook fast). In the last minute, lay mozzarella over the steak; cover pan until melted.

  2. Fry bacon until crispy.

  3. Fry eggs.

  4. Toast the rolls.

    About 14 min

  5. Build the chivito — this is the essential Uruguayan order: bottom roll → mayo → lettuce → tomato → steak with melted mozzarella → ham → bacon → fried egg → olives → pickles → top roll. It should barely be containable. This is not a modest sandwich.
