Ugandan Rolex Wrap
Uganda's beloved street food — the Rolex (from "rolled eggs"), a chapati flatbread rolled around a freshly fried omelette with tomatoes, onions, cabbage and capsicum. Created in the 1970s in Kampala, it's now Uganda's most iconic street food. The name comes from "rolled eggs" said quickly. The chapati is what makes it Ugandan.

Method
Chapati: mix flour, salt and enough warm water to form a soft dough. Knead 5 minutes; rest 20 minutes. Divide into 4 balls; roll thin. Brush with oil; fold in thirds; roll again (creates layers). Cook in a dry hot pan 2 minutes per side.
About 5 min
Mix omelette: beat 2 eggs with salt, pepper and a handful of the tomato, onion, capsicum and cabbage mixture.
About 14 min
Cook omelette: heat a little oil in the pan; pour the egg mixture to cover the whole base. Before it sets completely, place the cooked chapati on top of the still-wet egg.
About 14 min
Flip so the egg is on top of the chapati; cook 30 seconds more.
About 14 min
Roll the chapati-omelette together tightly into a cylinder. Wrap in paper. Eat while hot — this is the Rolex. Repeat for each serving.
