Sol Kadhi

सोल कढी / सोलकढी

Sol Kadhi is the Konkan coast's most iconic drink and digestive — a beautiful, naturally pink, cooling liquid made from kokum (dried Garcinia indica fruit) and freshly pressed coconut milk. In Goa and the Konkan regions of Maharashtra, no seafood meal is complete without a glass of Sol Kadhi — it neutralises the richness of the fish curry, cools the body in coastal heat, and acts as a powerful digestive. The drink is mildly sour from the kokum, creamy from the coconut milk, and lightly spiced with garlic, ginger, and green chilli. It is consumed at room temperature (unlike cold drinks) and is considered medicinal as much as culinary. The natural pink colour from kokum is stunning and entirely natural.

Method

  1. Soak kokum in 400ml warm water for 10–15 minutes. Squeeze the kokum pieces repeatedly to extract all the deep purple-pink pigment and sour flavour. Strain through a fine sieve into a bowl. Discard the spent kokum. The liquid should be a vivid pink-purple.

    About 10 min

Tip: Squeezing the kokum by hand rather than using a blender extracts more colour and flavour without bitterness.

  2. Add grated garlic, grated ginger, green chilli, and salt to the kokum liquid. Add the thick coconut milk and stir well. The mixture will turn from vivid pink to a beautiful soft pink-cream colour as the coconut milk combines with the kokum.

    About 3 min

Tip: The colour reaction is naturally beautiful — acid from kokum + coconut milk fat creates a gorgeous pink hue without any artificial colouring.

  3. Taste and adjust salt and sourness. Add more kokum extract if you prefer it more sour. Add fresh coriander. Serve at room temperature (not chilled — the coconut milk and spices are better perceived at room temperature). Serve alongside fish curry and rice. Sip between mouthfuls as a palate cleanser.

    About 2 min

Tip: Sol kadhi curdles if heated — serve it always at room temperature or slightly warm, never hot.
