Aam Panna (Raw Mango Summer Drink)

आम पन्ना

Aam Panna is India's greatest summer beverage — a tangy, sweet-sour drink made from raw green mangoes (kairi) blended with roasted cumin, black salt, and fresh mint, that cools the body, prevents heatstroke, and replenishes electrolytes in the Indian summer heat. It is a drink that was consumed by generations of Indians long before sports drinks existed. The raw mango is pressure-cooked or fire-roasted until soft, the pulp is extracted and blended with the spices and sugar, then chilled and served over ice with fresh mint. The characteristic sourness comes from the raw mango (a totally different flavour from tamarind or lime), and the smoky-spiced black salt creates a depth that makes aam panna unlike any other summer drink. It is both medicinal and delicious — a rare combination.

Method

  1. Cook raw mangoes: Either pressure-cook whole mangoes (with skin) for 3 whistles until completely soft, or roast them directly on a gas flame, turning, until the skin is charred and the inside is mushy. The roasted method adds a wonderful smokiness. Cool completely. Peel and squeeze/scoop out all the pulp. Discard skin and seed.

    About 15 min

Tip: Roasting on an open flame gives the aam panna a smoky depth — this extra step is worth it and produces a noticeably better drink.

  2. Blend the cooked mango pulp with sugar, black salt, regular salt, cumin powder, and mint leaves until completely smooth. Taste — it should be very sour, bold, and intensely flavoured. This is a concentrate — it will be diluted.

    About 5 min

Tip: The concentrate can be refrigerated for up to 2 weeks, making this a practical summer prep.

  3. To serve: Add 3–4 tbsp of concentrate to a glass. Add 200ml cold water and stir well. Add ice. Garnish with fresh mint. Taste — adjust sugar, black salt, and cumin to preference. Serve ice-cold. It should be predominantly sour with sweet undertones and a complex, smoky-spiced finish.

    About 2 min

Tip: Black salt is the soul of aam panna — do not substitute with regular salt. The sulphur compounds in black salt add a depth that makes the drink medicinal and complex.
