Papua New Guinea Mumu Platter

Papua New Guinea's traditional feast — mumu is the PNG earth oven (like Hawaiian imu or Māori hāngī): meat, sweet potato, taro and greens wrapped in banana leaves and cooked underground with hot stones. This platter recreates the earthy, smoky flavours oven-style: banana leaf-wrapped pork with taro, kaukau (sweet potato) and aibika greens.

Method

  1. Preheat oven to 160°C/320°F.

    About 5 min

  2. Lay banana leaves in a large deep roasting tin, overlapping, with enough overhang to fold over the top.

    About 14 min

  3. Layer sweet potato and taro in the base. Add pork pieces. Scatter garlic and ginger. Pour coconut cream over everything. Season with salt.

    About 14 min

  4. Top with aibika or spinach. Fold the banana leaves over to wrap everything tightly. Cover the tin tightly with foil to seal in the steam.

    About 14 min
