Namibian Kapana Beef Strips

Namibia's beloved street food from the Katutura township of Windhoek — kapana, thin strips of beef fried on a flat iron plate over coals in pools of oil, served with a fiery chakalaka-style tomato-onion relish (tomato, onion, pepper, chilli) and fat slices of white bread. The meat is often seasoned only with salt.

Method

  1. Mix tomato relish: combine diced tomatoes, onion, green pepper, chilli, lemon juice, salt and coriander. Rest while the meat cooks.

    About 5 min

  2. Season beef strips generously with salt and pepper.

    About 14 min

  3. Heat oil in a flat-bottomed cast-iron pan or griddle until very hot (almost smoking).

    About 14 min

  4. Fry beef strips in the hot oil in a single layer, stirring and turning, for 3–4 minutes until browned and cooked through. The high heat and oil give kapana its characteristic texture.

    About 14 min

  5. Serve the kapana in a bowl or on a sheet of paper. Spoon tomato relish over. Eat with thick slices of white bread — use the bread to scoop up the meat and relish.
