Mohanthal (Gujarati Besan Fudge)

મોહનથાળ

Mohanthal is Gujarat's most revered festival sweet — a dense, melt-in-the-mouth besan (chickpea flour) fudge made by toasting coarse besan in generous ghee until it turns nut-brown and fragrant, then combining with sugar, milk, and cardamom to set into a thick, rich, grainy-but-soft confection decorated with slivered almonds and pistachios. The name comes from "Mohan" (a name for Lord Krishna) and "thal" (plate) — it is literally "Krishna's plate" and is traditionally offered as prasad. The key to perfect mohanthal is the texture: it should be slightly grainy from the besan (not smooth like halwa), melt quickly on the tongue, and have a deep, nutty, roasted chickpea flavour from proper toasting. One of the most beloved Diwali and festival sweets of Gujarat.

Method

  1. Sprinkle warm milk into the besan and rub it in with your fingers to form small clumps (this creates the slightly grainy, fudge-like texture of mohanthal — smooth besan produces a different result). Heat ghee in a heavy pan on medium.

    About 5 min

Tip: The milk-rubbing technique is unique to mohanthal — it creates pea-sized lumps in the besan that remain after roasting, giving the signature coarse-grained texture.

  2. Add the clumped besan to hot ghee. Roast on low-medium heat, stirring continuously, 15–20 minutes until the besan is deep golden-brown and smells intensely of toasted chickpeas (the aroma is unmistakable — nutty, warm, like roasted gram flour). Add cardamom and saffron milk. Stir.

    About 20 min

Tip: Do not rush the roasting — underroasted besan tastes raw and earthy. The besan must reach a deep amber (not light golden) for the full mohanthal flavour.

  3. Remove from heat. Add sugar and mix quickly (residual heat dissolves it). Pour into a greased tray immediately. Spread to 2cm thickness. Decorate with almonds and pistachios. Cool at room temperature 2 hours until fully set. Cut into diamonds or squares. Store in an airtight tin up to 2 weeks.

    About 10 min

Tip: Add sugar off the heat — adding sugar on heat will cause it to crystallise unevenly. The mixture sets quickly so pour and spread without hesitation.
