Indian Masala Omelette
मसाला ऑमलेट
The Indian Masala Omelette is one of the most perfected and beloved expressions of street-food egg cookery in the world — a simple egg omelette transformed into something spectacular by the addition of finely chopped onion, green chilli, tomato, fresh coriander, and a pinch of turmeric. Cooked in a little oil on a well-seasoned iron griddle over high heat, the outside is slightly crispy and golden while the inside remains fluffy and moist. Found at every roadside dhaba, breakfast cart, and office canteen, the masala omelette served folded inside or alongside bread (omelette pav) is one of India's most satisfying and ubiquitous quick meals. The green chilli and coriander are absolutely non-negotiable.

Method
Prepare filling: Finely chop onion, deseeded tomato, green chilli, and fresh coriander. Crack eggs into a bowl. Add turmeric, salt, and half the chopped vegetables. Whisk briefly — the Indian masala omelette is not beaten to a uniform liquid like a French omelette; small bits of onion and coriander remain visible.
About 3 min
Tip: Deseed the tomato before chopping — excess tomato water makes the omelette wet and prevents crisping.
Cook: Heat oil or butter in a non-stick or well-seasoned pan over medium-high heat. When hot, add the remaining fresh vegetables (onion and chilli) directly to the pan first — cook for 30 seconds to soften slightly. Pour the egg mixture over them. Tilt the pan to spread evenly. Let the edges set (about 1 minute). Lift edges and tilt pan to allow liquid egg to run underneath.

Tip: For a crispy-edged omelette (the dhaba style), use a well-seasoned cast-iron tawa over high heat.
Finish and serve: When the top surface is just barely wet (not slimy but still slightly shiny), fold the omelette in half or thirds. Press briefly with spatula. Slide onto a plate. Garnish with remaining chopped coriander. Serve with buttered bread or inside a pav roll. A squeeze of ketchup on top is the classic street-food accompaniment.

Tip: Serve immediately. The Indian masala omelette is a strictly serve-at-once dish — it becomes rubbery if kept warm.
