Egg Bhurji

अंडा भुर्जी

Egg Bhurji is India's most beloved scrambled egg dish — a Mumbai street food icon and a staple of dhabas (roadside restaurants) from Karachi to Kolkata. Far more complex and flavourful than Western scrambled eggs, it is cooked with a sofrito base of onions, tomatoes, green chilli, ginger-garlic, turmeric, and coriander, and the eggs are broken directly into this masala and stirred continuously over high heat. The result is intensely spiced, moist, scrambled curds with flecks of green from coriander and a beautiful golden-orange colour from the turmeric. Served piled high on bread rolls (pav), with buttered toast, or alongside paratha, egg bhurji is the ultimate quick high-protein meal beloved by millions.

Method

  1. Build the masala base: Heat oil or butter in a pan over medium-high heat. Add the finely chopped onions and cook for 4–5 minutes until golden. Add garlic-ginger paste and fry for 1 minute. Add finely chopped tomatoes and green chilli. Cook for 3–4 minutes until the tomatoes soften and the oil begins to separate slightly. Add turmeric, red chilli powder, and salt. Cook for 1 more minute. The masala base should be fragrant and the oil should be slightly visible around the edges.

    About 5 min

Tip: High heat throughout this dish is key — this is a quick-fire cooking method, not a slow simmer.

  2. Add eggs: Crack the eggs directly into the pan with the masala. Do not beat them first — instead, break the yolks with a spatula and begin stirring and folding continuously over medium-high heat. The eggs should cook in large, moist, custardy curds — not small, dry pieces. Keep stirring and folding constantly for 3–5 minutes. Turn off the heat when the eggs are just set but still look slightly wet — residual heat will finish cooking them.

    About 8 min

Tip: The moist, large-curd texture is the goal. Overcooking gives dry, rubbery bhurji. Remove from heat slightly underdone.

  3. Finish and serve: Add garam masala and a handful of fresh chopped coriander. Toss once. Serve immediately piled high on buttered pav rolls, with toast, or alongside a hot paratha. A squeeze of lime on top and a slice of raw onion on the side are the classic accompaniments.

    About 2 min

Tip: Egg bhurji is strictly a serve-immediately dish — it does not keep well and becomes rubbery if made ahead.
