Method

  1. Season chicken with salt. Brown in oil in a large pot over high heat. Remove.

    About 5 min

  2. Blend onion, canned tomatoes, fresh tomatoes, garlic, ginger and scotch bonnet into a smooth purée.

    About 11 min

  3. In the same pot, fry the tomato-onion purée for 15 minutes over medium heat, stirring, until it darkens, dries out and the oil separates on the surface. This "frying the tomatoes" step is essential.

    About 11 min

  4. Whisk peanut butter with 200ml warm stock until smooth. Add this peanut mixture to the pot along with remaining stock. Stir well.

    About 11 min

  5. Return chicken to the pot. Bring to a simmer, cover and cook on medium-low heat for 40 minutes until chicken is completely tender and the sauce is thick, rich and a deep reddish-brown.

    About 11 min

  6. Taste and adjust seasoning with salt. The stew should be thick enough that a wooden spoon leaves a trail. Serve over white rice or with fufu.
