Gobi Paratha (Stuffed Cauliflower Flatbread)

ਗੋਭੀ ਦਾ ਪਰਾਠਾ

Gobi Paratha is the winter-special stuffed paratha of Punjab — a thick whole wheat flatbread generously filled with a spiced mixture of freshly grated cauliflower, green chilli, ginger, ajwain, and coriander, cooked golden on a tawa with ghee. Gobi paratha is a masterclass in the complexity of simple ingredients: raw grated cauliflower, when combined with ajwain, ginger, and dried pomegranate, transforms into a fragrant, slightly nutty, textured filling inside a crispy, buttery paratha. The key technique challenge is removing the moisture from grated cauliflower — wet cauliflower filling tears the dough. Salting and squeezing the cauliflower solves this. A staple of Punjabi highway dhabas and winter home kitchens, gobi paratha with makhan and lassi is one of the great simple pleasures of North Indian food.

Method

  1. Salt the grated cauliflower liberally, mix, and rest 10 minutes. The salt draws out moisture. Squeeze out ALL liquid using a clean cloth or by pressing firmly with your hands — this step is the non-negotiable secret of a gobi paratha that doesn't tear. The grated cauliflower should feel almost dry to the touch. Mix with ajwain, ginger, green chilli, coriander, red chilli, and salt (now add less salt since the cauliflower is already salted).

    About 10 min

Tip: Insufficiently dried cauliflower tears the paratha dough from the inside as steam builds up in cooking. Squeeze until no more liquid comes out — it should feel as dry as possible.

  2. Make soft atta dough with water, rest 15 minutes. Roll one dough disc to 12cm. Fill with 2–3 tbsp gobi mixture. Seal completely into a ball. Gently flatten and roll out to 20cm, using gentle, even pressure. Be mindful of cauliflower pieces that can puncture the dough — seal any tears immediately by pressing the dough together.

    About 10 min

Tip: If the cauliflower is very chunky, the pieces will pierce through the dough. For beginners, grate the cauliflower on the finest side of the grater for a smoother filling that rolls more easily.

  3. Cook on medium-high tawa with ghee, 2–3 minutes per side, pressing with a spatula for even cooking, until both sides are deeply golden and the paratha is fully cooked. The gobi filling should be soft and fragrant — you can smell the ajwain through the paratha. Serve immediately with cold yoghurt, pickle, and makhan.

    About 15 min

Tip: Gobi paratha tastes best straight off the tawa — it softens and loses its crispness if kept warm in a casserole. Serve each one immediately as it comes off the heat.
