Falafel Wrap

Beirut's essential street wrap — crispy falafel, creamy hummus, tomato, cucumber, parsley, pickled turnips and tahini rolled tightly in warm thin flatbread. The entire wrap costs about $1 USD in Lebanon and remains one of the world's perfect fast foods.

Method

  1. Warm flatbreads in a dry pan or directly over a gas flame for 30 seconds per side.

    About 5 min

  2. Spread a generous layer of hummus over the bread. Drizzle tahini sauce over the hummus.

    About 11 min

  3. Lay 4 falafel patties in a row down the centre of the bread and press them gently to flatten slightly. This gives a better texture in every bite.

    About 11 min

  4. Add diced tomato, cucumber, parsley and pink pickled turnips alongside the falafel.

    About 11 min

  5. Add harissa or zhug to taste. Roll the bread tightly over the filling, folding the bottom up first. Wrap in paper.

    About 11 min

  6. Eat immediately while the falafel are still crispy. The contrast of hot, crunchy falafel with cool, creamy hummus and acidic pickles is what makes this sandwich perfect.
