Bebinca (Goan Layered Coconut Pudding)
बेबिंका
Bebinca is Goa's most prized and labour-intensive sweet — a multi-layered golden-brown coconut pudding that is the queen of Goan desserts and the centrepiece of every Christmas and Easter celebration. Made from coconut milk, egg yolks, sugar, and flour, each layer is poured and baked individually under a broiler until caramelised before the next layer is added, creating anywhere from 7 to 16 alternating layers of golden, custardy perfection. The process is slow and meditative — a skilled bebinca-maker can produce 16 perfectly uniform, richly caramelised layers. The flavour is profoundly coconutty, custardy, and caramelised, with a texture that is simultaneously dense and yielding. It is sold at every Goan bakery and is the ultimate edible souvenir of Goa.

Method
Whisk egg yolks and sugar until pale and the sugar dissolves. Add coconut milk, flour, cardamom, and nutmeg. Whisk to a smooth, lump-free batter. Strain through a sieve. Preheat oven broiler to high. Grease a round cake tin or clay pot with ghee.
About 10 min
Tip: Straining the batter is non-negotiable — any lumps become visible flaws in the finished layers.
Pour a thin layer of batter into the greased tin (about 3–4mm thick). Place under the broiler 5–7 minutes until the top caramelises to golden-brown. Remove. Brush the cooked layer with ghee. Pour the next thin layer of batter. Return to broiler. Repeat for 7–10 layers.
About 1 hr
Tip: Each layer must caramelise properly (golden, not pale) before the next is added — pale layers produce a wan, bland bebinca without the signature caramel depth.
After the final layer is caramelised and set, cool in the tin for 30 minutes before unmoulding. The bebinca should unmould cleanly, showing the distinct layers in cross-section. Serve at room temperature, sliced thinly. Best eaten the next day when the layers have firmed.
About 20 min
Tip: The traditional Goan way is to invert the bebinca and serve with the caramelised bottom layer facing up — the most golden, attractive surface.
