Method

  1. In a small bowl, mix together the chili powder, ground cumin, garlic powder, and salt to create the fajita seasoning blend.

  2. Heat half of the olive oil in a large skillet over medium-high heat. Add the cubed tofu and sear until golden brown on all sides, about 6-8 minutes.

  3. Sprinkle half of the fajita seasoning over the tofu, toss well to coat, and cook for another minute until fragrant. Remove tofu from the skillet and set aside.

  4. In the same skillet, add the remaining olive oil along with the sliced bell peppers and red onion.

  5. Sauté the vegetables over medium-high heat until tender-crisp and slightly charred at the edges, about 5-7 minutes.

  6. Add the remaining fajita seasoning to the vegetables, tossing continuously for 1-2 minutes until thoroughly coated and aromatic.

  7. Divide the warm cooked brown rice evenly between two serving bowls.

  8. Top the rice beds with the seasoned seared tofu and the sautéed fajita peppers and onions.

  9. Garnish with fresh chopped cilantro and serve with lime wedges on the side for squeezing over the top.
