Method

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.

  3. Place the cubed seitan, zucchini rounds, bell pepper squares, and red onion pieces in a large shallow dish. Pour the herb marinade over the top, tossing gently to coat all pieces evenly. Let it marinate for 15 minutes.

  4. While the mixture marinates, combine the jasmine rice and water in a medium saucepan. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes or until the water is absorbed and the rice is tender. Remove from heat and keep covered.

  5. Thread the marinated seitan and vegetables alternately onto the prepared skewers, packing them closely together.

  6. Preheat a grill pan or outdoor grill to medium-high heat. Lightly brush the grates with oil.

  7. Place the skewers on the hot grill and cook for 12 to 15 minutes, turning every few minutes to ensure all sides are nicely charred and the vegetables are tender-crisp.

  8. Serve the hot grilled seitan and vegetable skewers immediately over a bed of fluffy jasmine rice.
