Tonno alla Siciliana

Sicily's classic fresh tuna dish — tonno alla siciliana, thick tuna steaks braised in a sweet-sour agrodolce sauce of onions, tomatoes, olives, capers, vinegar and mint. The Sicilian mint (mentuccia) and the sweet-sour profile reflects the island's Arab culinary heritage. Served at room temperature, the tuna absorbs the sauce overnight and becomes extraordinary.
