Method

  1. Rinse the kidney beans and soak in 3× their volume of cold water overnight (8+ hours). The water will turn pinkish — that's completely normal. Drain and rinse before cooking. Skipping the soak means much longer cooking and tougher beans.

    About 5 min

  2. Add soaked rajma to a pressure cooker with 4 cups fresh water, 1 bay leaf, and ½ tsp salt. Cook on high for 5–6 whistles. The beans are done when you can crush one between your fingers with zero resistance — they should be creamy inside, not chalky. Reserve the cooking liquid, it's flavour gold.

  3. Heat oil in a heavy pan. Add cumin seeds and let them splutter and turn slightly darker — about 30 seconds. Add finely chopped onion and cook on medium heat for 10–12 minutes, stirring regularly, until rich golden brown. The darker and more caramelized the onion, the deeper your rajma will taste. Add ginger-garlic paste and cook for 2 minutes.

    About 15 min

  4. Add chopped tomatoes, turmeric, red chili powder, and coriander powder. Cook on medium-high, stirring often and mashing the tomatoes down, until the oil separates around the edges and the masala turns a deep reddish-brown — about 10–12 minutes. The smell at this point should be extraordinary.

    About 12 min

  5. Add cooked rajma with 1 cup of the reserved cooking liquid. Stir well and mash about a quarter of the beans against the pan — this naturally thickens the gravy. Simmer on low-medium for 12–15 minutes, stirring occasionally, until the gravy is thick and clingy. Stir in garam masala and kasuri methi, taste for salt.

    About 15 min

  6. Wash basmati rice until water runs completely clear (this removes excess starch). Bring 2.5× the volume of water to a boil with ½ tsp salt. Add rice, stir once, cover tightly, and cook on the lowest heat for 12 minutes. Turn off heat and let it steam undisturbed for 5 minutes before fluffing with a fork. Serve the rajma hot over rice with raw onion rings and a squeeze of lemon — that's the real way.
