Pizza Quattro Formaggi
Italy's four-cheese pizza — pizza quattro formaggi, a white pizza (no tomato) topped with four different Italian cheeses. The classic combination is mozzarella, Gorgonzola, Fontina and Parmigiano Reggiano. Sometimes with a fifth — Pecorino. The combination of fresh melting cheese, blue cheese, alpine cheese and aged hard cheese is deeply complex.
