Pizza Diavola
Italy's spicy pizza — pizza diavola ("devil's pizza"), topped with tomato sauce, mozzarella and spicy Calabrian salami (nduja-style soppressata or salame piccante), scattered with hot chilli oil drizzled at the end. The salami crisps up in the oven; the fat renders into the mozzarella creating a pool of spicy red oil.
