Mumbai Toast Sandwich

मुंबई टोस्ट सैंडविच

The Mumbai Street Toast Sandwich is one of the most ingenious pieces of fast food ever invented — a triple-layered sandwich of white bread toasted on a griddle or sandwich press, filled with layers of spiced boiled potato slices, cucumber, tomato, and beetroot, smothered in green mint-coriander chutney and a generous spread of butter, then grilled until golden, cut into triangles, sprinkled with chaat masala and sev, and served with tomato ketchup. Every Mumbai street vendor has a different arrangement of fillings and an intense pride in their chutney recipe. Found at virtually every street corner and railway station in Mumbai, the toast sandwich costs very little and is both filling and complex in flavour.

Method

  1. Prepare fillings: Slice the boiled potato, cucumber, tomato, and cooked beetroot into thin rounds. Season the potato slices with a pinch of chaat masala and salt. Butter all six bread slices generously on one side. Spread green chutney on three of the slices (the chutney side will face inward).

    About 10 min

Tip: Room-temperature butter spreads cleanly without tearing the bread. Cold butter will tear.

  2. Assemble triple-layer sandwich: Lay a butter-chutney side up. Layer potato slices on this slice. Place second slice butter side down to close the first layer, then flip so butter side faces up. Spread chutney on top of this slice. Layer cucumber, tomato, and beetroot slices. Cover with third slice, butter side down. Press firmly. You should have 3 layers of bread with 2 layers of filling.

    About 10 min

Tip: The triple-layer sandwich is the signature of the Mumbai street version. Double-layer versions exist but the triple is more authentic.

  3. Toast and finish: Toast in a sandwich press or grill on a buttered flat pan, 2–3 minutes per side, until both sides are golden. Cut into 4 triangles. Sprinkle chaat masala generously over the top. Add a handful of sev on top. Serve immediately with tomato ketchup on the side.

    About 10 min

Tip: The chaat masala and sev added after toasting are what make this a chaat experience, not just a sandwich.
