Mozzarella in Carrozza

Naples' beloved fried mozzarella sandwich — mozzarella in carrozza means "mozzarella in a carriage", referring to the bread casing. A thick slice of mozzarella sandwiched between two slices of white bread, dipped in egg and breadcrumbs, then fried until the bread is golden and the mozzarella inside is completely melted. Sometimes with anchovy. Pure indulgence.

  3. Dip each sandwich in egg; then coat in breadcrumbs; press firmly. Dip in egg again; breadcrumbs again (double coat). Press sealed edges to prevent opening during frying.

    About 9 min

  4. Heat oil to 170°C. Fry 2 minutes per side until deeply golden. The mozzarella must be completely melted inside.

    About 9 min

  5. Drain briefly on paper. Eat immediately — the melted mozzarella stretches dramatically when you pull it apart. A few seconds delay and the moment is lost.
