Fish Kabiraji (Kolkata Lacy Egg-Coated Fish Fry)

ফিশ কবিরাজি

Fish Kabiraji is one of Kolkata's most spectacular and unique dishes — a whole fish fillet (typically bhetki/barramundi) crumbed in spiced breadcrumbs, then coated in a beaten egg that is poured over the frying fish and allowed to set into a dramatic, lacy, frilly golden egg-web that completely envelops the fish in a delicate, crispy egg lace. The result is visually unlike any other fried fish — the fish is surrounded by an ethereal, crispy egg fritter that shatters dramatically when bitten into. The name "Kabiraji" is a Bengalisation of "coverage" (English colonial word) — the fish is "covered" in egg. It is the signature dish of Kolkata's iconic restaurants like Peter Cat and Mocambo, served with mustard sauce, salad, and bread rolls, representing the unique Anglo-Indian-Bengali culinary fusion of Kolkata.

Method

  1. Marinate fish fillets with ginger-garlic paste, green chilli paste, lemon juice, black pepper, and salt for 20 minutes. Set up a 3-stage breading station: flour, beaten egg (2 of the 6 eggs), breadcrumbs. Coat each fillet in flour, then egg, then breadcrumbs. Press breadcrumbs firmly. Refrigerate breaded fish 10 minutes.

    About 15 min

Tip: The breaded fish must be completely cold before frying — cold coating adheres better to the fish and produces a crisper crust.

  2. Beat the remaining 4 eggs with salt, pepper, and a tiny pinch of turmeric into a loose but well-combined mixture. Heat oil to 170°C in a wide, deep pan (wide is essential — the egg lace needs space to spread). The egg pouring technique is the whole art of kabiraji — you need confidence.

    About 5 min

Tip: The remaining egg batter should be completely smooth — beat thoroughly until no streaks of yolk are visible. Any lumps will break the egg lace.

  3. Slide a breaded fish fillet into the hot oil. Immediately pour 1 ladleful of beaten egg in a circular motion around and over the fish — the egg will spread in the oil, touching the frying fish and setting into a frilly, lacy web that completely surrounds it. Do not disturb for 2 minutes (the egg lace sets). Carefully fold the egg lace around the fish using chopsticks or tongs. Flip once. Fry until golden. Serve with mustard sauce, a lemon wedge, and bread rolls.

    About 15 min

Tip: The egg-pouring must be done with confidence in one continuous circular motion immediately after the fish enters the oil. Hesitation produces a broken lace rather than the signature complete web.
