Method

  1. Clean and butterfly the whole young goat. Rub generously with salt, cumin, oregano, minced garlic, and pepper. Squeeze lime juice all over.

    About 30 min

  2. Skewer the goat through a large metal spit, trussing securely with butcher's twine so it holds its shape.

    About 20 min

  3. Build a mesquite wood fire. When coals are glowing, position the spit about 40 cm above the heat.

    About 30 min

  4. Slowly rotate the spit for 3 hours, basting occasionally with lime juice. The skin should be golden and crisp.

    About 3 hr

  5. Rest the goat 15 minutes. Carve and serve with warm flour tortillas, salsa roja, and sliced onion.

    About 15 min
